Kale Salad with Walnuts & Feta Cheese

 “In September, I attended a garden party at the home of a couple in Vallejo. There were lots of good things to eat, but the kale salad was both delicious and healthy.“  TOBY TOVER –  Account Executive


Prepare kale: rinse, remove stems and chop into strips. Place in a bowl. Sprinkle with a large pinch of salt.  Massage salt into the kale for 3-5 minutes. The kale will appear darker in color and slightly wilted when you are done.  (Massaging kale in this manner will decrease any bitterness.)  Combine kale with remaining ingredients: chopped red onion, walnuts, & feta cheese.  Prepare dressing. Combine: olive oil, apple cider vinegar, and lemon juice. Toss salad with dressing.  Add salt & pepper to taste.


1 bunch kale a large pinch salt

½ red onion, chopped

½ cup walnuts, chopped

½ cup crumbled feta cheese

3 Tbs. olive oil

2 Tbs. apple cider vinegar

2 Tbs. lemon juice

Salt and pepper to taste
